E’ un taglio piatto con una grossa parte di osso e non molta carne. Sono ottime cotte in forno, in padella e grigliate. Le costine di maiale sono uno dei nostri tagli migliori: grazie al loro gusto incredibile sono infatti le protagoniste indiscusse del barbecue. In America le chiamano “ribs” e dopo essere condite con un mix di sale, zucchero e spezie, chiamato”rub”, vengono arrostite sulla griglia e affumicate!
