L’ossocollo è un pezzo pregiato, si ottiene dalla carne della regione del collo dapprima sottoposta a salatura per alcune ore e successivamente speziata con pepe, la cannella e chiodi di garofano. Immediatamente dopo il condimento, il prodotto viene insaccato. E’ ottenuto da carni di suini allevati in loco per almeno quattro mesi e alimentati prevalentemente con prodotti aziendali. La lavorazione delle carni viene effettuata con metodi tradizionali ma nel rispetto dei più rigorosi criteri igienici. Il prodotto stagionato e pronto al consumo ha un delicato aroma caratteristico e al taglio si può apprezzare il caratteristico disegno dato dalle parti magre e grasse.Per una degustazione ottimale si consiglia di tagliarlo a fette sottili accompagnato con una fetta di pane e un bicchiere di vino rosso.
