Ingredienti per 4 persone: 8 fettine di lonza, 2 cucchiai di pepe verde, 30 g di burro, 1 scalogno, 1 bicchierino di brandy, sale, 200 g di panna da cucina.
Preparazione: sistemare le fettine di lonza su un tagliere e cospargere entrambi i lati con il pepe verde precedentemente pestato e il sale.
Rosolare lo scalogno con il burro in una padella, aggiungere lo scalogno e far insaporire qualche istante a fiamma dolce, aggiungere la lonza e cuocere per pochi minuti a fiamma viva sfumando con il brandy.
A cottura ultimata versare la panna e qualche granello di pepe verde e cuocere qualche secondo in modo che si formi la salsa con la quale servire la lonza.
