Ingredienti per 4 persone:
300g di riso carnaroli, 1 cipolla, 40g di burro, 250g pancetta stagionata, 1 bicchiere di vino bianco, 4 zucchine, 600ml di brodo di carne o vegetale, sale e pepe q.b., olio extravergine d’oliva e grana padano grattugiato q.b.
Preparazione:
Rosolare la cipolla e la pancetta stagionata tagliata a cubetti nell’olio extravergine d’oliva. Aggiungere le zucchine tagliate a julienne e far cuocere il tutto per 8 minuti. Versare il riso e lasciare insaporire a fiamma bassissima per qualche minuto. Sfumare con il vino bianco e lasciare che il vino evapori, sempre mescolando. Coprire infine con il brodo e lasciar cuocere senza mettere il coperchio per circa 15 minuti a fuoco medio, mescolando di tanto in tanto.
A cottura ultimata aggiungere 2 manciate di formaggio grattugiato e mantecare con il burro. Mescolare bene e far riposare per qualche minuto prima di servire.
